So - I would recommend using this overnight, and at a push for two nights, but really, does anyone have a bottle of Prosecco that lasts that long?!!
The results are in! I've used this stopper twice now since the original post, and I can confirm the stopper has worked! The first time, the stopper was used over 2 nights (yes I know) and the fizz remained, if not slightly less by day 3. Last night I used it again, and this evening, removed the stopper to a hear a satisfying "pffffttt"! On sampling, I can confirm, it is as fizzy as last night.

I actually managed to string a bottle out over 4 days and my stopper was a godsend ..... (this sounds astonishingly like one of the testimonials in the Lakeland catalogue ... Ooh I really don't know how I've managed without my melon baller/banana peeler/kumquat juicer all these years)

Wow good work, mine actually tasted quite flat after 3 nights!
